Oat pizza crust.

So we’ve talked about how much my family loves pizza and I mean really? Who doesn’t?

This will be the second in a series of easy pizza crusts I’m doing, you can find the link to the first one here. Look forward to more delicious guilt-free crusts soon!

This particular pizza crust is 100% gluten-free. We have been experimenting with reducing our gluten intake to help naturally stabilize Jeffrey’s type 2 diabetes. If you’d like you can read more about our recent lifestyle change and his diagnosis. We don’t have gluten-free crust every time we have pizza, but it’s become a favorite. Whatever your reason, you don’t have to skimp on taste to eat better!

This pizza crust is very  quick and easy to make. That in part is that it doesn’t require yeast.

What you’ll need:

1 1/2 cups of warm water

*2 3/4 cups oat flour

1 tsp salt

1 tsp oil

Put water, salt and oil into a mixing bowl. Pre-heat your oven to 450°. Add one cup of oat flour at a time and stir, this will properly hydrated your oat flour. Let rest for 10-15 minutes. Resting is optional, but it assures that your dough ball will be easier to roll out and not be so tacky. Knead for about 2-5 minutes dusting your work surface with whole oats or oat flour. Your dough ball should look something like this after being kneaded. Put in the oven and cook for 15 minutes or until just getting golden on the outside of the crust. Pull out, cover with your favorite toppings. Put back in the oven until your cheese it completely melted.

*If you want a more crunchy texture you can replace one of the cups with whole rolled oats. Instead of using oat flour

If you don’t like the cracked edges you can always cut them back with a pastry cutter or pizza cutter. To give a smoother edge and then work the cut off dough back into the center.
